Kinilaw na Tuna is a popular dish in Kidapawan City, Davao, Gensan and other areas where tuna is fresh and readily available.
Tuna meat is filleted then mixed with strips of radish, cucumber, unripe mangoes, onions and ginger. Kalamansi or vinegar is poured over the mix right before serving to avoid “overcooking”.
